Simple Mushroom Penne With Walnut Pesto

Ingredients:
- 8 ounces penne pasta
- 4 tablespoons butter
- Ingredients 16 ounces fresh sliced mushrooms
- 1/4 cup Parmesan cheese, grated or sliced into thin slices
- Salt and pepper, to taste
- Fresh parsley, 1/4 cup (for topping)
- 1 cup walnuts
- 1 ½ cup greens (spinach or basil are awesome – handful of basil for a classic pesto taste!)
- ½-¾ cup Parmesan cheese (shredded)
- 1/4 cup olive oil
- 1 clove garlic
- Juice of 1 lemon
- Salt and pepper to taste
Directions:
- Prepare penne pasta following package instructions Drain it and set aside.
- In a small sauté pan, over low heat, toast the walnuts; do not add any butter or liquid. Sauté the walnuts, shaking and stirring continually until fragrant and toasty about 5 minutes.
- Add all walnut pesto ingredients in a food processor and process until mostly smooth.
- Melt butter in a large, wide skillet over medium heat. Add the mushrooms and cook for 8cm 10 minutes until they turn a deep golden brown.
- Return the penne pasta to skillet and stir. Add the parmesan cheese and season with salt, pepper,and fresh parsley or any other herbs.
- Ladle the pasta into 4–6 bowls. Spoon an extra-large dollop of the walnut pesto over each bowl, or stir into your prepared pasta.
