Black Bean and Corn Salad recipe : Black Beans, Sweetcorn
Ingredients:
- A 15-ounce can of black beans, rinsed and drained
- 1 cup corn, fresh or frozen (or even canned succotash)
- 1 bell pepper, diced
- 1 avocado, diced
- 1/2 onion, diced
- Sliced fresh cilantro, chopped 1/4 cup
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions:
- Pour beans into a large bowl with corn, bell pepper, avocado onion and cilantro.
- Meanwhile, combine the lime juice, olive oil and salt & pepper in a small bowl.
