Black Bean and Corn Salad recipe : Black Beans, Sweetcorn 


Ingredients:

  • A 15-ounce can of black beans, rinsed and drained
  • 1 cup corn, fresh or frozen (or even canned succotash)
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/2 onion, diced
  • Sliced fresh cilantro, chopped 1/4 cup
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions:

  1. Pour beans into a large bowl with corn, bell pepper, avocado onion and cilantro.
  2. Meanwhile, combine the lime juice, olive oil and salt & pepper in a small bowl.
  3. Drizzle the dressing over salad; stir gently until mixed.
