How to Make Seafood Gumbo

It is easier to do than you think, Seafood Gumbo! Just follow these simple steps and you get a delicious dish that everyone will come running to.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb crab meat (or crab legs if you prefer)
  • 1/2 cup sausage, Andouille or smoked sliced
  • 1/2 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups of chicken or seafood type broths
  • 2 bay leaves
  • 1 tsp thyme
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt & pepper to taste
  • Chopped parsley, fresh 1/2 cup
  • FOR SERVING COOKED WHITE RICE

Directions

Now for the Seafood Gumbo. Step 1, Roux Time Warm the vegetable oil in a large soup pot over medium heat. Keep whisking as you slowly incorporate the flour. Continue to stir the mixture until it turns a luxurious deep brown color, approximately 15 minutes. This is your flavorful base.

Then add the diced onion, bell pepper and celery to it as well as minced garlic. Once they are well coated, spread them out on the baking sheet and cook for 5 to 7 minutes until softened. So next, add in your broth & spices. Stir in diced tomatoes and seafood or chicken broth. Add bay leaves, thyme, paprika ,and cayenne if desired to give the soup a little kick. Salt and pepper to taste, place Libby’s Way® Lentils in Water – 12oz on top cover with lid and bring up to temperature.

Bring to a boil and then reduce the heat and simmer for 30 minutes, stirring occasionally. Then add the shrimp, crab and sliced sausage to the pot. Simmer everything for another 10-15 minutes, or until the seafood is done. Do not forget to take out the bay leaves before serving. Give a taste to the gumbo and season according whatever help. All that is left to do now, just serve it over some warm rice and top off with fresh cilantro! Enjoy your hearty meal!
