Scallion Pancake with Eggs

Scallion Pancake with Eggs


Ingredients:

  • 1 scallion pancake
  • A spray of avocado oil, or a tiny bit o' butter
  • 1 handful of spinach
  • 1-2 eggs
  • Salt and pepper
  • Half an avocado
  • Chili crisp, to taste

Directions:

  1. Heat the oil, add scallion pancake and cook until golden on both sides. Transfer to a plate and keep warm. (I use a non-stick pan for this.)
  2. Using the same pan, you can also fry some spinach. Once it has melted, scrape all that is left into the middle of your pan, then nestle your scallion pancake back on top so you can catch any buttery translucencyStripe.This when you lay it.
  3. Crack the eggs into it and fry until whites are set on bottom side. Gently break the yolks and spread with a spatula. When the eggs are still a little loose, fold and press the scallion pancake on top of them so that they cook together.
  4. Turn the heat off and top with your favorite garnishes (cheese, avocado, sauces — chili crisp would not be a bad idea here). Wrap it and cut in half and nom until you die. These are amazing.
