Red, White and Blue Cake Recipe
Ingredients:
- 2½ cups cake flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1¼ cups buttermilk
- 4 large egg whites
- 1 ½ cups granulated sugar
- 1/2 cup (1 stick) unsalted butter
- 1 teaspoon vanilla extract
- Gel paste coloring, red and blue
Directions:
- Set two oven racks in the center of your oven and preheat to 350°F (177°C). Spray three 8 or 9-inch round cake pans with nonstick spray. Spoon flour into pans, then shake out excess. That will make it easier and you can even use baking spray with flour.
- Whisk together the cake flour, baking powder and salt in a medium bowl. In a separate bowl, mix buttermilk and egg whites.
- Preheat the oven to 350°F (180°C) and line a muffin tray with paper linersIn a large bowl beat softened unsalted butter and granulated sugar using an electric mixer. Beat at medium speed for 3 minutes or until light and fluffy. Add vanilla extract later on.
- Beat in one-third of the flour mix. Pour 1/2 of the buttermilk egg mixture into this. Half the reminder of dry ingredients, then stir to combine. Slowly pour the rest of the buttermilk and eggs, then sprink all of teh dry ingredients. In the end and after 2 minutes deflate it a little by beating again .
- Place batter into three separate bowls. Make two of those ones red and the Other Ones blue Add gel paste coloring, a little at a time until you get the desired color. Divide the batters between their respective prepared pans.
- Bake for 20-25 minutes (8-inch rounds) or bake for 15-20 min.(9-inch) The cakes should have risen and feel firm but springy when lightly pressed. When tested with a toothpick, it should come out clean. Cool the cakes on wire racks for 5 minutes then run a knife around edge of pan and invert onto rack until completely cool.
- Apply frosting to your cake once it's cool! Spread a layer of frosting in the middle between two cakes and top with more to cover whole cake.
