Quinoa Bowl with Roasted Sweet Potatoes & Camembert Cream How to
Ingredients:
- One large sweet potato, peeled and cubed
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup quinoa
- 2 c broth or water (vegetable)
- 1/4 teaspoon salt
- 1/2 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- Sesame seeds, for garnish
Directions:
- Sweet Potatoes: Preheat your oven to 400°F (200°C). Spread your sweet potato cubes on a baking sheet and drizzle them with olive oil , paprika, garlic powder, some salt, & pepper. Place onto a baking sheet in an even layer and bake for 20 to 25 minutes or until tender-crisp.
- For the quinoa: In a medium saucepan, bring water or vegetable broth to a boil. Quinoa and a pinch of salt Reduce heat to low, cover and simmer 15-20 minutes or until quinoa is tender. Fluff it with a fork.
- Step 4: To make the Creamy Dressing add greek yogurt, lemon juice, minced garlic, salt and pepper to a small bowl.
- To Assemble the Bowls: Divide cooked quinoa among bowls. Finish it off with roasted sweet potatoes, feta cheese and that creamy dressing. Ann garnish with Sesame seeds.
