Puff Pastry Apple Tart Recipe
Ingredients
- 1 sheet frozen puff pastry, defrosted (about 8-9 ounces)
- Unbleached all-purpose flour, for rolling
- 30g Soft Unsalted Butter — 2 tbsp (each piece around 15 g)
- 25 g / 2 tbsp granulated sugar
- 1 large egg yolk, at room temperature
- 1/2 tsp vanilla extract
- ¼ cup (28g) almond meal/flour
- ½ teaspoon ground cinnamon
- Pinch kosher salt
- 1 large egg
- 1 teaspoon water
- 25g (2 tablespoons) granulated sugar
- ⅛ teaspoon ground cinnamon
- 16 ounce s): Honeycrisp, medium size (about ¾ lb; or other sweet ones like Fuji)
- 1/2 Tablespoon cold, unsalted butter (in very small pieces)
- For drizzling over the top before serving Salted bourbon caramel sauce
- Vanilla ice cream
Directions
- Preparation Note: It is essential for the frozen puff sheet to be thaw over night in a fridge or at room temperature from 1-2 hours. Return to the fridge when defrosted .
- Place a rack in the center of your oven and preheat to 400°F (205°C). Prepare a half-sheet pan by lining it with parchment paper.
- For Pastry: Spread the defrosted puff pastry sheet on a floured surface. Roll it out into a 9×13″ rectangle. Place the annulet on the prepared mealy sheet pan and prick the center of dough with a fork around border at 1-inch intervals. B) Cover with plastic wrap and refrigerate while you prepare the filling.
- Prepare the Frangipane: In a mini food processor or with a hand mixer, cream together the room temperature butter and sugar together. Beat until creamy. Stir in egg yolk and vanilla. Mix the almond meal/flour, cinnamon and salt. It preferably should be soft to spread; if it gets too thick, let sit at room temperature for a few minutes.
- Prepared the Egg Wash: In a bowl, whisk (mix) an egg with 1.5 tablespoon of water and keep it aside.
- To Assemble the Tart: In a small bowl, combine the granulated sugar with cinnamon. Oh and also cut the apples in half and core them. Very thinly slice the apples, approximately 1/16-inch slices. Stack the slices as best you can for easy transferring.
- Remove puff pastry from refrigerator, brush off excess flour and spread an even layer of frangipane across the top leaving a 1-inch border on all sides. Line up the apple slices according to their length, alternating them and barely overlapping each. When filling the pie, spread apples in a layer over bottom and sprinkle with cinnamon sugar mixture Add small pieces of butter across tops which allow for optimal browning Brush the sides using egg wash, but not allowing it to drip.
- Bake & Serve: Bake until crust is puffed and golden brown, 20–25 minutes (rotate pan after 20 to ensure even baking.) Cool on a wire rack for about 10 minutes. Cut into squares and enjoy warm with bourbon caramel drizzle sauce sauce, ice cream on the side.
