How to Make Protein Pancakes


Ingredients:

  • 2 large Eggs
  • 1/2 cup Sour cream or pure whole milk Greek yogurt
  • 2 servings Protein powder
  • 1 teaspoon Baking powder
  • Nonstick cooking spray, butter or coconut oil for pan

Directions:

  1. In a large non-stick skillet, heat over medium. Spray with cooking spray or use a dab of butter, coconut oil and allow to melt.
  2. Combine eggs, protein powder and baking soda in a large bowl. Mix in the sour cream or Greek yogurt.
  3. To the skillet, add with a 1/4 cup measuring cup of batter. You should be able to fry 3 pancakes at a time. They are about ready to flip once bubbles form on the top and edges appear set.
  4. Top with butter, sugar free syrup or whatever and your favorite toppings like chocolate chips/blueberries etc.
