Potato Chip Latkes

From Potato Chip Latkes to a lightened up Classic, these potato pancake recipes will provide you with a fun and delicious way of mastering latke making. You no doubt remember these from Shaws; but in my opinion they were better than the ones you can buy and so easy to make. With few ingredients you can create a snack they will love.

Potato Chip Latkes


Ingredients

  • 2 cups crinkly, wavy or ripple sea salt kettle-style potato chips (you could use up to 3/4 of a single bag depending on the size)
  • 1 large egg
  • 1/3 cup milk
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1 tbsp all purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon ground black pepper
  • 1 tbs finely minced onions
  • Pinch cayenne
  • 1/4 c. vegetable oil for frying
  • Apple sauce, optional
  • 1/4 cup sour cream, optional
  • Tablespoons freshly chopped chives (2 tablespoons)

Directions

  1. Now place your potato chips in a bowl and crush them with my hand like so until all of the chip is crumbled! ⠀You should have about 1 cup total just FYI.
  2. Add the egg, milk, water and a pinch of salt to a large bowl; whisk until combined Then add in flour, baking powder black pepper together with onions and cayenne. Stir in 1 cup of crushed potato chips into the batter until well incorporated.
  3. Chilled in the refrigerator, cover and leave for 30 minutes to an hour, or overnight if desired.
  4. In a nonstick skillet, heat the vegetable oil on medium. Spoon half of the batter into 4 equal mounds in hot oil. Over moderate heat, brown on one side (approximately 4 minutes).
  5. Turn the latkes over and cook for another 3 to 4 minutes until they are golden brown. Drain them on a plate lined with paper towels for ~1 minute
  6. Potato Chip Latkes can be served with apple sauce, sour cream and fresh chives!
