Perfect Blueberry Pie
Ingredients:
- 2 1/2 cups fresh blueberries
- 1 1/2 cups granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 homemade pie crust
Directions:
- Bake in the oven at 425°F (220°C).
- In a large bowl, mix the fresh blueberries with sugar, cornstarch and lemon juice along with vanilla. Toss to make sure all the blueberries are combined.
- Pour the blueberry filling into prepared pie crust, spreading out evenly.
- Feel free to go ahead and top it with a crust or pretty lattice!
- Bake the pie for 45-50 minutes, until golden and bubbly around the edges of apple slices.
