How to Make Meatloaf Muffins
Ingredients:
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/2 cup finely chopped onion
- 1/4 cup milk
- 1 egg
- 1.T Worcestershireauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup ketchup (for topping)
Directions:
- Preheat oven to 350°F (175°C).
- Mix ground beef, breadcrumbs, onion, milk and egg together in a large bowl. Add Worcestershire sauce salt and pepper;
- Mix until just combined. Don’t overmix!
- Lightly grease a muffin tin.
- Stir in meat mixture, spooning into each muffin cup until about 3/4 full.
- Spoon some ketchup over the top of each meatloaf muffin.
- Cook in the oven for 25–30 minutes or until browned and cooked through.
- Tip from the oven and serve a few minutes after it has cooled down.
How to Serve Meatloaf Muffins
Hot out of the oven these Meatloaf Muffins! Delicious on their own or served alongside mashed potatoes, steamed veggies (above), or a green salad. You can also supply them with more ketchup or barbecue sauce on the side to dip!
