Homemade beef enchiladas Recipe
Beef enchiladas are so easy to make, it's ridiculous. Now let's get on with the ingredients and instructions!
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 C Shredded Cheese (Cheddar or Mexican)
- 8 flour tortillas
- 2 cups red enchilada sauce
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for cooking
Directions:
- Oven Temperature: 375°F (190°C)
- Add a little olive oil to skillet over medium heat. Add ground beef and chopped onion. Cook, breaking up the beef with a wooden spoon as it browns.
- Add ground beef to pot and season with cumin, garlic powder salt, and pepper.
- Spread half of the enchilada sauce in a baking dish.
- Roll up that tortilla with a bit of beef and some cheese, place it seam-side down in the baking dish.
- When all tortillas are filled and stacked in the dish, cover with remaining enchilada sauce (there should be plenty) and top with reserved cheese.
- Bake 20 minutes or until bubbly and cheese is melted. Serve hot!
