The Best Hazelnut Chocolate Cheesecake Recipe


Ingredients

  • Use the same amount of graham cracker crumbs as used in a traditional pie crust: 1 1/2 cups.
  • 1/4 cup melted butter
  • 1/4 teaspoon salt
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup chopped hazelnuts
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate chips

Directions

  1. Bake the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, mix your graham cracker crumbs and melted butter with the salt. Press this mixture on the bottom of a 9-inch springform pan. Line the piecrust with parchment paper and fill it with dried beans or pie weights; bake for 8-10 minutes until set, then let cool completely.
  2. Prepare the Filling: In a large mixing bowl, combine softened cream cheese and beat until smooth. Add sugar slowly while beating until light and fluffy. Then add in the sour cream, flour and vanilla extract. Add eggs, one at a time and beat well after each addition. Add the chopped hazelnuts and stir again.
  3. Then Bake: pour the creamy filling into his crust and bake. Bake for 50 to 60 minutes, or until the center is set but still slightly wiggly. Heat off and cheesecake inside with door slightly ajar for 1 hour. Now, turn off the oven completely and leave them overnight inside.
  4. Prepare The Chocolate Ganache: In a saucepan, warm the heavy cream over medium heat until simmering. Take it off the heat and stir in your chocolate chips until smooth/melted.
  5. Assembly: once the cheesecake has cooled completely, pour the chocolate ganache over top. And top with some chopped fresh hazelnuts for decoration.
