How to Make Greek-Inspired Lamb Bowl with Tzatziki & Roasted Vegetables
Ingredients:
- 1 lb lamb shoulder, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes, optional
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 1/2 teaspoon paprika
- 1 cup Greek yogurt
- 1 cucumber, peeled and grated
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped dill
- 1 cup cooked rice
- 1/2 cup crumbled feta cheese
- Kalamata olives, for garnish
Directions:
- How to Marinate Lamb: Combine lamb with olive oil, oregano, garlic powder and the seasonings (salt/peppeand red pepper flakes if using) in a bowl. Soak for at least 30 minutes in the brine (or up to 2 hours, covered and refrigerated).
- Roast the Veggies : Coat sliced zucchini, yellow squash, red onion and cherry tomatoes in olive oil , paprika, garlic powder salt & pepper. Place on a baking sheet and roast in the oven at 400°F (200°C) for about 20-25 minutes, or until fork-tender.
- Cook the Lamb: Preheat a grill over medium heat. Remove the lamb from the marinade and grill for 2-3 minutes on each side until cooked.
