How to Make Fresh Berry Chantilly Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup softened unsalted butter
  • 1 cup milk
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 400g fresh berries (strawberries, blueberries and raspberies) 2 cups
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 Tbsp vanilla extract (for the cream)

Directions:

  1. Pre-heat oven to 350°F (175°C). Lightly grease and flour 2 round cake pans.
  2. Cream together softened butter and granulated sugar in a large bowl until light and fluffy.
  3. Mix one egg well incorporated at a time. Stir in the vanilla extract.
  4. In another bowl, mix together flour with baking powder and salt.
  5. Add the dry ingredients to the wet mixture in batches, alternating with milk — mix until just combined.
  6. Pour the batter into cake pans evenly and bake.
  7. Bake 25-30 minutes, until a toothpick inserted into center comes out clean. Cool the cakes in their tins on a wire rack.
  8. To make chantilly, combine heavy cream, mascarpone cheese (not traditional but brings a nice tang), powdered sugar and vanilla in bowl of stand mixer until soft peaks form.
  9. Cool the cakes, then when ready to serve put one cake on a plate and spread some of your Chantilly cream next add some of juicy berries.
  10. Second layer goes on top and cover everything with the balance of chantilly cream. Top with additional fresh berries.
  11. Slice and serve.
