A fun little twist on the classic Italian dessert, Coconut and Raspberry Tiramisu! It is light, creamy and full of fruity goodness. This lovely dessert can be enjoyed on any occasion, either at a family barbecue or as in the case served for st night pudding.

Coconut and Raspberry Tiramisu Recipe

Ingredients :

  • 1 cup coconut milk
  • 1 cup mascarpone cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup ladyfinger cookies
  • 1 cup fresh raspberries
  • 1/2 cup shredded coconut
  • 1/2 cup brewed coffee, cooled
  • Cocoa powder for dusting

Directions :

  1. Place a pinch of the cheese mixture in bottom middle area and wiggle about 12 raspberry corners into it (sugar side-down) making both halves mirror images to create wings
  2. Soak each ladyfinger in the cooled coffee for a few seconds and lay them out on your serving dish.
  3. Layer with half the mascarpone mixture over ladyfingers.
  4. Top with a layer of fresh raspberries.
  5. Top with another layer of dipped ladyfingers and the remaining mascarpone mixture
  6. Sprinkle on top shredded coconut and refrigerate for a minimum of 4 hours.
  7. Dust with cocoa powder, and serve.

How to Serve Coconut and Raspberry Tiramisu

Chill this delicious tiramisu and serve. Cut the now chocolate filled noodles into squares, arrange on a plate Lay extra raspberries on top for a stunning presentation. It’s perfect for sharing!
