How to Make Chipotle Twice-Baked Sweet Potatoes
Ingredients:
- 4 large sweet potatoes
- 2 tablespoons olive oil
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 2 tablespoons chipotle sauce
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Green Onion, chopped for garnish
Directions:
- Set the oven to 400°F (200°C)
- Scrub sweet potatoes to clean and poke with a fork multiple times.
- Rub roots with olive oil and arrange on a baking sheet. Roast for about 45 minutes or until done.
- Take out from the oven then cool a little.
- Halve sweet potatoes lengthwise and scoop flesh into a bowl; discard skin, leaving a 1/4-inch border.
- Combine the sweet potato flesh with sour cream, cheddar cheese, chipotle sauce, garlic powder and salt and pepper until smooth.
- Scoop the mixture back into the sweet potato skins.
- Place it back in the oven for another 15-20 minutes, until everything is heated through and a tad bit golden on top.
- Top with green onion, chopped just before serving.
