Chicken Hunter's Style
Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Directions
- In a large skillet, heat the olive oil over medium.
- Toss in the chicken thighs and drumsticks, browning each side.
- Take out the cooked chicken and keep aside.
- In the same skillet, add diced onion and sliced bell pepper. Sauté until softened.
- Add the minced garlic and continue cooking for 1 more minute.
- Diced Tomatoes, Chicken Broth, Oregano & Basil S&PEnd or not to add salt and pepper is up you. Mix well.
- Add the chicken back, bring to a boil then lower heat and cover with simmer for 30-40 min or until the chickens done.
