- Ingredients for 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/4 cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (15 oz) jar marinara sauce
- 1/4 cup chopped fresh basil
- 1 pound fusilli pasta
- Salt for cooking water
- shredded mozzarella cheese, 1 cup
- Olive oil
Directions:
- Add the flour, grated Parmesan cheese, Italian seasoning garlic powder salt and black pepper to a shallow dish. Dip the chicken breasts into this mixture, ensuring they are completely covered.
- Heat a large skillet over medium-high heat and drizzle in oil. Drop in the coated chicken breasts, and cook for 3 to 4 minutes per side or until golden browned and cooked through.
- Meanwhile cook chicken, bring a large pot of generously salted water to the boil. Put the fusilli pasta and let it cook following package directions until al dente. Drain once the pasta has cooked and set to one side.
- Lay the cooked chicken breasts on a baking sheet. Top each breast with marinara and a handful shredded mozzarella.
- Preheat the oven to 400°F (200°C) and bake for about 5-7 minutes. You want the cheese to melt and be bubbling.
