Cajun White Chicken Chili is a delicious recipe that brings some Southern spice into your kitchen. This chili is one of those hearty, filling dinners that are so perfect for a cozy dinner – it's full of warm spices and has meltingly soft chicken.

Especially White Chicken Chili Cajun Style


Ingredients:

  • 1 lb of chicken breast (cooked + shredded)
  • Ingredients1 lb andouille sausage, sliced
  • 1 cup shrimp, peeled and cleaned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • White beans are excellent — 1 can, drained and rinsed
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2-3 tbsp Cajun spice
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: sour cream, fresh cilantro and/inexperienced onions

Directions:

  1. In a large pot, heat an olive oil on medium heat. Next, add the onions to this and fry till they are soft. Add the minced garlic and sauté another minute.
  2. Now add the sliced andouille sausage, cook until it is browned.
  3. Add your shredded chicken, shrimp, white beans (drained), diced tomatoes with the juices and seasoning. Bring the mixture to a boil.
  4. Lower the heat and allow it to simmer for approximately 20 minutes.
  5. Season to taste with salt and pepper.
  6. Garnished with a little sour cream, cilantro or Scallions etc. and serve hot.
