Ingredients

  • 2 teaspoons finely grated zest (from 1 medium lemon)
  • The zest of 2 lemons + the juice of those same two lemons, which should make about a cup, combined.
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 3/4 teaspoon fine salt
  • 1/8 teaspoon black pepper
  • 2 c. cooked bulgur (I used medium grind)
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 small cucumber.
  • A red bell pepper – chopped finely
  • 1/3 cup minced red onion
  • 1/3 c fresh Italian parsley, chopped finely
  • 1/3 cup dill, finely chopped
  • 1/2 cup crumbled feta cheese

Directions

  1. Rinse and prepare the bulgur according to package instructions. To cook the bulgar you basically measure water to two parts like for rice… I find that about 3/4 cup of dry bulgur gives you around 2 cups when cooked. In other words you can prep the bulgur up to 3 days ahead of time!
  2. In a large mixing bowl, toss the cooked bulgur with chickpeas, cucumber, bell pepper , red onion. parsley,dill,feta cheese Season with salt and pepper to taste, more lemon juice if desired. Carefully mix up everything.
  3. For the dressing, whisk all ingredients together include lemon zest and juice olive oil honey Dijon salt black pepper Drizzle the salad and mix well, so that the dressing will coat over everything.
