Lasagna Soup is a super easy and comforting meal that I adapted from this recipe for Tomato Basil Lasagna. Great for cold days or when you just want something comforting, this soup is super easy to throw together and one of the those dishes that goes down well with everyone in the family.

How to Make Lasagna Soup

Kid and Adult Pleasing Recipe for Lasagna Soup Only a handful of ingredients and steps stand between you and an absolutely amazing meal that is sure to be loved by all.

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 1 (15-ounce) can crushed tomatoes
  • 6-ounce jars of tomato paste (two)
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 9 lasagna noodles, broken up
  • 1 cup ricotta cheese
  • Mozzarella cheese, grated- 1 cup
  • Fresh parsley for garnish

Directions:

  1. In a large pot, cook the ground beef over medium heat along with chopped onions and garlic. Drain the excess fat.
  2. Pour in the broth , crushed tomatoes and tomato paste. Add basil, oregano and salt, pepper stir well. Bring to a simmer.
  3. Break the lasagna into pieces and cook as directed on package to al dente; drain.
  4. Add the ricotta cheese and mix until combined.
  5. Top with hot mozzarella and fresh parsley.Serve immediately!

How to Serve Lasagna Soup

Ladle up into bowls and serve your Lasagna Soup nice and hot. Top it off with a little bit of extra mozzarella cheese, and few fresh parsley leaves if you’re feeling fancy. Serve it with a good chunk of rustic bread and you will have yourself an entire meal.
