How to Make Lemon Drop Bars
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- Softened unsalted butter – 1/4 cup
- 2 large eggs
- 1 cup granulated sugar
- Fresh squeezed Lemon Juice — 1/4 cup
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- For garnishing- Candied Lemon Peel
Directions:
- Preheat oven to 350ºf (175°C) and grease an 8×8 inch baking dish
- Whisk flour with confectioners' sugar and softened butter in a medium bowl. Mix until crumbly. Press the crust into the bottom of prepared baking dish.
- In a separate bowl, whisk together eggs, granulated sugar, lemon juice and zest , baking powder and salt.
- Spread it on top of the crust in a baking dish.
- Transfer to the oven and bake for 20-25 minutes or until set in center and golden brown around edges.
- Cool completely in the pan, then slice into bars.
- Garnish with candied lemon rind when serving.
