Spicy Thai Pasta Salad Ingredients

This is a simple and enjoyable salad to make! This is what you need and how it all comes together.

Ingredients:

  • 8 oz spaghetti or linguine-style pasta
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup shredded carrots
  • 1/2 cup green onions, sliced
  • 1/2 cup cilantro, chopped
  • 1/4 cup peanuts, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon red pepper flakes

Directions:

  1. Cook the pasta as per instructions on packet and drain, set aside to cool.
  2. Mix the cooled pasta, red bell peppers, cucumbers , carrots and green onions into a large bowl with cilantro & peanuts.
  3. In another bowl, mix the soy sauce, peanut butter, lime juice squeezed from two halves of a cut almond (save one other half for example), sesame oil (or vegetable or canola oils not very good at all ), honey and chili peppers.
  4. Drizzle the dressing over top and mix gently.
  5. Refrigerate for at least 30 minutes before serving.

This is a versatile salad and can be served cold either as a main course or on the side. Or even better top with grilled chicken or shrimp for a complete meal. And sprinkle a few more peanuts over the top for added crunch!
