Caprese Avocado Salad
Ingredients:
- 2 ripe avocados
- And 2 cups of halved cherry tomatoes
- 1 cup fresh bocconcini mozzarella balls, cut in half
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Directions:
- Halve the avocados, remove their pits and scoop out flesh into a bowl. Directions Slice the avocado into 12 equal wedges.
- In a huge blending bowl, include the cherry tomatoes, bocconcini + newly destroyed basil.
- Combine sliced avocado in the bowl with other ingredients.
- Spritz with olive oil and balsamic vinegar, then season to taste.
- Gently toss until all the ingredients are combined, being careful not to mash the avocado.
- Serve immediately.
