Grilled Chicken Caesar Salad Recipe
Ingredients:
- 2 large boneless, skinless chicken breasts – cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 tea cayenne pepper, optional
- 1 head of chopped romaine
- 1/2 cup croutons
- 3/4 sprayed grated Parmesan cheese
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 anchovy fillet (optional)
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 tsp Worcestershire Sauce
- Salt and pepper to taste
Directions:
- Ingredients:1 pound boneless-skinless chicken, cut into 2″ cubes4T olive oil3t paprika (sweet) or smoked Hungarian style pepper5 savory bouquetspices and /or seasoning with ground cumin,cayenne pepper for heat — if desiredgarlic powder as neededsaltpepperninot too much because the onion will fatten up a bit when you cook it. Toss to coat.
- Heat a grill pan over medium heat and cook the chicken cubes for 2-3minute on each side or until they are fully cooked.
- For the Caesar dressing: In a small bowl, whisk together mayonnaise, Parmesan cheese, garlic and anchovy (if using), lemon juice, Dijon mustard and Worcestershire sauce; season with salt & pepper.
- Allow to fully cool and then Break up in a large bowl with your romaine lettuce, croutons & some Parmesan cheese. Top with grilled chicken and Caesar dressing. Toss to coat.
