How to Make Mediterranean Shrimp Bowl with Pesto, Tomatoes & Orzo

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 pint cherry tomatoes
  • 1 tablespoon olive oil (for tomatoes)
  • 1/2 teaspoon garlic powder (for tomatoes)
  • 1/4 teaspoon salt (for tomatoes)
  • 1/4 teaspoon black pepper (for tomatoes)
  • 1/4 teaspoon dried oregano
  • 1/2 cup pesto sauce
  • 1 cup cooked orzo pasta
  • 1/2 cup crumbled feta cheese
  • Fresh basil leaves for garnish

Directions:

  1. In a bowl, combine shrimp, olive oil, paprika, garlic powder, salt, pepper, and cayenne pepper (if using). Toss to coat the shrimp well.
