Grilled Chicken Bowl with Sweet Potato Fries & Creamy Sauce Recipe


This bowl is easy to make tasty! You will not believe how fast everything comes together, ensuring you have one happy table of hungry mouths to feed !

Ingredients:

  • 2 boneless skinless chicken breasts, 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cayenne pepper — 1/4 teaspoon (optional)
  • 2 x sweet potatoes, peeled and cut into big wedges
  • Shredded 1/2 head red cabbage
  • 1/4 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon chopped parsley
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Directions:

  1. Combine the chicken cubes in a bowl with olive oil, paprika, garlic powder , salt and pepper and cayenne (if using). Mix the chicken, stir well.
  2. Mix the sweet potato wedges in a bowl with olive oil, paprika, garlic powder, salt and pepper until fully coated.
  3. Grill on medium heat. Layer the chicken and sweet potato fries, then grill for 2-3 minutes on each side. Bake for about 30-45 minutes or until chicken is cooked through and fries are golden brown.
  4. Meanwhile, make the slaw. In a separate bowl combine the shredded red cabbage, carrots, green onions, rice vinegar sesame oil and salt & pepper. Mix and toss it all up.
  5. In a small bowl, combine the mayonnaise, chopped parsley,m yoghirt , lemon juice,minced garlic,salt and pepper to make creamy sauce.
  6. HOW TO ASSEMBLE: divide the sweet potato fries and slaw in bowls. Add the grilled chicken and top with creamy sauce.
