Spicy Crunchy Salmon and Avocado Sushi Roll Recipe
Ingredients:
- 1 cup uncooked sushi rice
- 1.5 cups water
- 0.25 cup rice wine vinegar
- 2 tablespoons white sugar
- 0.5 teaspoon salt
- 5 sheets nori (dry seaweed)
- 1 Avocado(Optional: sliced thinly)
- 1 (8 ounce) package cream cheese, cut into 10 slices lengthwise
- 5 tablespoons panko
- 5 strip cut cucumber (medium)
- olives and a few chopped artichoke hearts 3 ounces smoked salmon, minced
- 0.25 cup masago
- 1 teaspoon black sesame seeds
- White sesame seeds, toasted 1 tsp
- 2 tablespoons hoisin sauce
- 2 tbsp Sriracha mayo
Directions:
- Wash the sushi rice through a strainer until water runs clear. Drain the rice well.
- In a pot over medium heat, add rice and 1.5 cups of water. Bring it to a boil. Next, drop the heat to low and continue cooking for 20 minutes with a lid.
- Prepare a simple dressing while the rice cooks. Combine vinegar, sugar and salt in a small saucepan. Place over medium heat and stir until the sugar is melted. Turn the heat off and let it cool.
- When the rice is cooked, remove from heat and mix in a bit of the vinegar solution. Cool the rice to at least room temperature (30 minutes).
- Lay your nori sheets out on the clean worksurface. Add the cooled rice to each of your sheets and spread evenly. Spread and flatten the rice to the edges using a rice paddle. Turn the sheets so that it is placed with rice side down.
- Add 2-3 slices of avocado to the middle, topped with 1.5 strips or so of cream cheese (don't go overboard), a tablespoonish amount od panko, and one cucumber slice there as well on each sheet. Lay the sheets flat out and roll each one tightly around your fillings.
- Top each roll with salmon slices, a layer of masago and drizzle with hoisin sauce and Sriracha mayonnaise. Sprinkle black & white sesame seeds. Slice each roll into 8-piece.
