Cheesecake Crepe Roll-Ups

Cheesecake Crepe Roll-Ups Recipe


Ingredients

  • 2 tablespoons flour (any type of all purpose)
  • 2 tablespoons milk
  • 2 eggs
  • 2 teaspoons honey
  • 1 pinch salt
  • 2 tablespoons butter, divided
  • 1 (8-oz.) package cream cheese, softened
  • 0.5 cup confectioners' sugar
  • 1/4 cup mixed frozen berries, partially thawed
  • Confectioners' sugar for garnish (optional), about 1 tablespoon

Directions

  1. In a bowl, whisk the flour, milk eggs and honey together in to smooth batter — as you would for pancakes.
  2. Place a medium non-stick crepe pan over moderate heat and add about 1 tablespoon of butter to melt until the foam subsides. Add a couple of tablespoons from the batter into the pan, using it to coat evenly. Continue to cook the crepe until it is no longer liquid in nature, approximately 1 minute; then flip and repeat for another full 60 seconds. Working with the rest of the batter and adding a little bit more butter as needed, repeat to make 4 crepes total. Remove from pan and set aside in a single layer on paper towels.
  3. Whip cream cheese in a second bowl with 1/2 cup powdered sugar until smooth. Fold in the mixed berries gently.
  4. Spread the cream cheese mixture across one side of each crepe and then roll. Chill in an refrigerator and then slice into 1-inch pieces for serving.
