Cheesecake Crepe Roll-Ups Recipe
Ingredients
- 2 tablespoons flour (any type of all purpose)
- 2 tablespoons milk
- 2 eggs
- 2 teaspoons honey
- 1 pinch salt
- 2 tablespoons butter, divided
- 1 (8-oz.) package cream cheese, softened
- 0.5 cup confectioners' sugar
- 1/4 cup mixed frozen berries, partially thawed
- Confectioners' sugar for garnish (optional), about 1 tablespoon
Directions
- In a bowl, whisk the flour, milk eggs and honey together in to smooth batter — as you would for pancakes.
- Place a medium non-stick crepe pan over moderate heat and add about 1 tablespoon of butter to melt until the foam subsides. Add a couple of tablespoons from the batter into the pan, using it to coat evenly. Continue to cook the crepe until it is no longer liquid in nature, approximately 1 minute; then flip and repeat for another full 60 seconds. Working with the rest of the batter and adding a little bit more butter as needed, repeat to make 4 crepes total. Remove from pan and set aside in a single layer on paper towels.
- Whip cream cheese in a second bowl with 1/2 cup powdered sugar until smooth. Fold in the mixed berries gently.
- Spread the cream cheese mixture across one side of each crepe and then roll. Chill in an refrigerator and then slice into 1-inch pieces for serving.
