Smoked Salmon Potato Tartine

Smoked Salmon Potato Tartine


Ingredients:

  • 1 large russet potato, peeled and coarsely grated lengthwise
  • 2 oz clarified butter or vegetable oil
  • Kosher salt
  • Freshly ground black pepper
  • 4 ounces goat cheese, at room temperature
  • 1 ½ tbsp chives sliced finely
  • 1/2 garlic clove, grated on a microplane
  • Zest of ½ lemon
  • Thinly sliced smoked salmon
  • 2 tablespoons drained capers
  • 2 tbl finely chopped red onion
  • ½ boiled egg (mashed)
  • Chopped chives (to garnish)

Directions:

  1. Potato Tartine: Briefly peel the potato lengthwise — use it swiftly to prevent oxidation. Take the grated potato in a clean towel and squeeze all its water. Transfer to a bowl and season well with salt and pepper. Toss well to coat.
  2. Prepare Potato: In an 8 to 10-inch skillet over medium-high heat, melt the clarified butter. Once hot, add the grated potato. Flatten into a large circle with spatula. Use a spoon to tamp it down. Cover and cook on medium for 8-10 minutes till underneath is nicely golden brown.
  3. Carefully flip and continue to cook: Flip the potato cake with as little hassle as possible (you may need two spatulas for this) and allow it to freeze on its second side until crispy, another 8-10 minutes. Now take it out from the skillet and leave on a rack to cool down till slightly warm.
  4. To make Goat Cheese Mixture: Mix goat cheese, lemon zest and garlic in a bowl. Season with salt and pepper. Add fresh chives in a Gentle Manner and Keep Aside. Salt the red onion and chopped egg.
  5. Tartine Assembly: Once potato cake is cool, spread with the goat cheese mixture. Cover with smoked salmon and sprinkle of red onion, hard boiled egg and capers. Garnish with chopped chives. Cut into slices and enjoy!
