A beautiful hit of harissa, freshened up with lime and mint. Plus, they are fun to make! I sometimes like to make them on the weekends when my family is over. How to Make Zucchini Roll Ups with Harissa, Goat Cheese, Lime, and Mint
Ingredients:
- 1 lb (16 oz) baby-like, thin or long as 6-inches-large x no anemic than sixteenths-every inches sun-dried zucchinis
- Extra virgin olive oil
- 1/2 lb goat cheese, the softer and easier to spread (packed at room temperature)
- 2 teaspoons harissa paste
- 2 Tbsp. finely minced fresh mint leaves
- 2 tsp Parmesan Cheese , grated(optinke toptaud 1.5 -a tempetweet Olive oli
- 1 teaspoon fresh lime zest
- ½ teaspoon fresh lime juice
- Kosher salt
- Freshly ground black pepper
- 1 TBS extra virgin olive oil
- 1 teaspoon ripped mint leaves
- 2 teaspoons fresh lime juice
- ¼ teaspoon harissa paste
- Kosher salt
- Freshly ground black pepper
Directions:
- With a mandolin, thinly slice the zucchini length-wise (¼ inch thick). Lay the slices on a large rimred baking sheet and lightly sprinkle with salt all over.
- Spread a large dollop of harissa goat cheese in the center, then top with mint slivers. Season with salt and pepper, to taste.
- Pat the slices of zucchini dry to remove any extra moisture that you can and then drizzle lightly with olive oil. Drizzle the sliced with olive oil and gently toss them so they are all coated since it will make sure that eggplant slices do not stick to each other.
- Heat a grill pan over medium heat. Working in batches, large grill pan set over high heat and sear zucchini slices for a few minutes on each side. Make sure to not put too many of them in the pan at once. Once cooked, put them aside onto a plate.
- Assembly — place a zucchini slice on your work surface. Spread thin amounts of goat cheese mixture along the length and roll them up firmly. Place them on a plate. Repeat with remaining slices.
- Make the vinaigrette: whisk together olive oil, mint, lime juice and harissa in a small bowl if you wish.
- If using, drizzle a serving platter with vinaigrette, place zucchini rolls on top and serve at room temperature.
