Fancy Avocado Toast

This fancy but EASY Avocado Toast is great for breakfast, lunch or dinner even! This recipe makes a small amount, so if you're looking to only have this for one meal say breakfast or brunch go ahead make it. It's quick to make using simple ingredients.

How to Make Fancy Avocado Toast


Ingredients

  • A very small ripe avocado — pitted and cut into pieces (chunked or sliced)
  • 2 teaspoons fresh lemon juice
  • Two to three ripped basil leaves
  • Ground red pepper flakes (plus extra for sprinkling on top)
  • Kosher salt
  • Freshly ground black pepper
  • 1 large egg
  • 1x thick slice real good sourdough bread (toasted)
  • Drizzle of extra virgin olive oil

Directions

  1. In a bowl, mash up the avocado with lemon juice and ripped basil leaves together with a pinch of red chilli flakes. Mash one or two pieces of avocado gently with a fork and then stir in the rest. The avocado should be way, WAY chunky — there should still at least a couple whole slices in the mix. Season with salt and pepper, to taste; set aside.
  2. Egg + cold water (fill up a small sauce pan until the egg is roughly an inch submerged in above.) Bring to a rolling boil. Remove from heat immediately, cover the skillet and keep it aside for 4 minutes. After 5 minutes carefully remove the eggs, you will then have an egg with just set white and a runny thick yolk.
  3. Fill a small bowl with ice water. Transferring egg to the ice water (to stop cooking) and cool down enough for handling in 4 minutes Crack the shell by tapping to a counter gently, then peel it under running water or into tepid water. Try not to puncture that delicate yolk.
  4. Divide the avocado mash among the toasty bread, drizzle with olive oil lightly and add 1 soft boiled egg (halved by using a knife right before serving) And red pepper flakes, to taste. Serve immediately.
