Potato Chip Latkes

Potato Chip Latkes
Ingredients
- 2 cups crinkly, wavy or ripple sea salt kettle-style potato chips (you could use up to 3/4 of a single bag depending on the size)
- 1 large egg
- 1/3 cup milk
- 1/4 cup water
- 1/2 teaspoon salt
- 1 tbsp all purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon ground black pepper
- 1 tbs finely minced onions
- Pinch cayenne
- 1/4 c. vegetable oil for frying
- Apple sauce, optional
- 1/4 cup sour cream, optional
- Tablespoons freshly chopped chives (2 tablespoons)
Directions
- Now place your potato chips in a bowl and crush them with my hand like so until all of the chip is crumbled! ⠀You should have about 1 cup total just FYI.
- Add the egg, milk, water and a pinch of salt to a large bowl; whisk until combined Then add in flour, baking powder black pepper together with onions and cayenne. Stir in 1 cup of crushed potato chips into the batter until well incorporated.
- Chilled in the refrigerator, cover and leave for 30 minutes to an hour, or overnight if desired.
- In a nonstick skillet, heat the vegetable oil on medium. Spoon half of the batter into 4 equal mounds in hot oil. Over moderate heat, brown on one side (approximately 4 minutes).
- Turn the latkes over and cook for another 3 to 4 minutes until they are golden brown. Drain them on a plate lined with paper towels for ~1 minute
- Potato Chip Latkes can be served with apple sauce, sour cream and fresh chives!
