How to Make Red Lentil Soup
Ingredients:
- 2 tbsp extra virgin cold pressed olive oil
- 1 ½ c pureed or very carefully grated carrots (about 2 large ones)
- 1 large yellow onion, chopped finely (about 2 cups)
- INSTRUCTIONS1 cup red bell pepper, finely chopped; about 1 medium pepper
- 1 teaspoon salt (divided)
- 2 cloves garlic (minced)
- 1 tablespoon tomato paste
- 1 tsp Aleppo pepper flakes
- 1 1/4 cup red lentils
- Chicken (or veg) broth, 1 quart
- 1/4 c heavy cream (sub coconut)
- Juice of one lemon
- Regular garnishes: a little more cream, lemon slices and wedges, parsley or cilantro, Aleppo pepper flakes (or red pepper), black peppercorns
Directions:
- Place a 6-quart Dutch oven or other heavy-bottomed pot over medium-high heat. Add the chopped carrots, onion and bell pepper in hot olive oil. Add 1/2 teaspoon of salt and mix all thoroughly. Stir well and cook for about 10-12 minutes (staple them every now and then) so the vegetables will get soft, yet a little caramel brown color.
- Add minced garlic, tomato paste and Aleppo pepper flakes next. Stir 1 minute to meld the flavors.
- Add the red lentils, broth and 1 cup of water. Bring the mixture to a boil. Cover the pot and simmer. Simmer over moderate heat, stirring occasionally till sauce is slightly thickened (you want some juice for those delicious gnocchi to soak up; about 20 minutes). Cook until the lentils are soft, and you can press a carrot piece gently against side of pot.
- Blend the soup to your desired consistency with an immersion blender. If you want it more chunkier just blend less.
- Stir in heavy cream, then lemon juice. Try a little and if you want to brighten it up, add more salt.
