Fish Taco Casserole Recipe
Ingredients:
- ½ cup dried breadcrumbs
- 1 teaspoon chili powder
- ½ teaspoon salt
- 1/2 teaspoon black pepper freshly cracked
- ¼ teaspoon ground cumin
- 3/4 kg firm white fish, like halibut or sea bass
- 2 tablespoons vegetable or canola oil
DIVIDED 6 MEDIUM FLOUR TORTILLAS
- 1 large tomato (sliced)
- 1 yellow onion, medium chop
- 1 cup salsa (divided)
You will need to shredded 12 oz of Monterey Jack Cheese (the recipe says divided)
- 1 cup shredded cabbage
- ½ cup sour cream, for serving
- Lime wedges (for serving)
Directions:
- Preheat the oven to 350 f (175 c)
- Mix bread crumbs, chilli powder, salt and pepper and cumin together in flat wide bowl.
- Add the fish and cut into 6 pieces, per serving size. One by one dip fish pieces in breadcrumb mix.
- In a skillet, heat the oil. Cook the fish 2 to 3 minutes a side, or until golden.
- Grease a 9×13 inch baking dish. Put 3 tortillas at the bottom of a casserole dish.
- Place the fried fish on top of tortillas. Top the fish with sliced tomatoes, chopped onion and half of the salsa.
- Scatter one third of the cheese over everything.
- Top with the remaining three tortillas. Stir in half the cheese, then layer over all but a little of tomatoes ,onion and salsa sprinkling with remaining cheese.
- Bake for 20 minutes.
- Cut into 6 servings.
To plate:
Place some shredded cabbage on the plate and top that with a serving of fish taco. Top with sour cream and a squeeze of lime. You can even top it with additional salsa, some sliced avocados or a scoop of guacamole if desired!
